Howard Park:
One of Sunnyvale's oldest Japanese restaurants, this place boasts a loyal clientele of Nisei and Sansei families. Very old-school, with private tatami rooms and waitresses in kimonos. Most of the wait staff speak limited English, so you must be patient if you don't speak Japanese.
JP Park:
Actually I think the sushi and sashimi here aren't the best things. They have amazing Japanese small-plates, and good fish though. Look for the seasonal specials taped to the menu.
Joyce Park:
Unappealing location, but totally authentic homestyle Japanese food. I often get the kaki zosui (rice soup with oyster).
Adam Rifkin:
The sushi and sashimi here is excellent, but the place gets busy so go during off hours.
